Baked Italian sausage and peppers served on a bun or with pasta so simple and delicious. This recipe features hot/spicy Italian sausage, but if spicy is not your thing you can use mild sausage.
I love the holidays, but I have to admit that I am pretty stressed at this time of year. There never seems to be enough time in the day to get all the things done that I want to do. That is where simple meals like this one comes in handy.
We love Italian sausage and eat it often if it is not on pizza, in sandwiches, or over pasta. I have been experimenting with Italian sausage links for about the past month. I tried making them in the slow cooker with tomato sauce, green peppers, and onions… I wasn’t really happy with the end result.
This version of baking the Italian sausage with the veggies in the oven is my preferred way. The links were done to perfection and the veggies were tender and perfect for the sandwiches that I had in mind.
And one of the best things I was able to complete everything in just under an hour. No stress in this meal, really. Serve it with a delicious bun, side salad, or maybe some pasta. It’s perfect for the busiest time or any time of the year.
If you love Italian sausage you are sure to love this baked Italian sausage and peppers. Oh, I forgot to mention I line the pan with aluminum foil; it makes cleaning up a snap.

Baked Italian Sausage and Peppers
Ingredients
- 5 Italian sausage links
- 1 large green pepper
- 1 large red pepper
- 1 large onion
- 1 tablespoon olive oil
- non-stick cooking spray
Instructions
- Preheat the oven to 375 degrees F. Line a rimmed baking pan with aluminum foil and spray with a non-stick cooking spray.
- Remove the tops of the green peppers. Discard the seeds and membrane of the peppers. Slice the peppers into 1/4 to 1/2-inch strips. Peel the onion and slice into 1/4 to 1/2-inch strips
- Place the peppers and onion slices into a bowl and pour the olive oil over the top. Toss until the vegetables are well coated.
- Place the Italian sausage on the prepared baking pan. Arrange the peppers and onions around the sausages.
- Place in the preheated oven and bake for 20 minutes. Turn the sausages over and stir the peppers and onions. Bake for another 20 minutes or until vegetables are fork tender and sausage are no longer pink inside
- Stir on buns or over pasta.

Simply Amazing. I added a little shredded Gouda (had to I’m a Dutchman🇳🇱😉) over it about 40 mins in, and it was delicious. So I tried it again a week later this time with a nice aged sharp cheddar, but this time put a small slit down the centre of the links, and added the cheese there. Made some fresh buns and made them for a family potluck. Made 45 of them, and it was the only dish with no leftovers. So my family agrees. Simply delicious! Greetings from Saskatchewan Canada 🇨🇦!
