Easy to make… no bake chocolate peanut butter oatmeal cookies.
If you read my last post, I mentioned that we were waiting on the birth of a new grandson. He is finally here, he came into the world earlier this evening and he is perfect. It was love at first site. I am so happy for our daughter and son-in-law and so happy that everything went well.
I ย have been struggling with recipes of late, I have been trying a few things and things have not been working out as I had planned. It is so disappointing to have a recipe in your head and when you make it, it is nothing like you envisioned. ย So I decided to go with something simple, a chocolate peanut butter oatmeal cookie.
Nothing can go wrong when chocolate and peanut butter is in the picture, right? And for another plus there is no baking. This will be perfect when summer rolls around and the weather is hot, no oven to heat up the house.
The cookies are choked full of chocolate, peanut butter, oatmeal and I threw in some extra chopped peanuts, well just for the fun of things. Instead of sugar there is honey to add a little sweetness, so overall these cookies are a bit on the healthy side. That is right, you don’t have to feel too guilty when you reach for that second cookie that you know you just have to have.
So bookmark this recipe for a hot summer day or make it now, just because they are really tasty.
Ingredients
- 1 cup peanut butter
- 1 1/2 cup semi-sweet chocolate chips
- 3 tablespoon honey you can add another tables or two if you want a sweeter cookie
- 1/2 cup butter
- 2 teaspoon vanilla
- 1/2 cup finely chopped peanuts
- 2 1/2 cup oatmeal quick oats or old fashion
Instructions
- In a medium sauce pan add the peanut butter, chocolate chips, honey, and butter. Over medium low heat, melt all the ingredients until completely melted and blended together. Stirring occasionally. Once the ingredients are melted and blended remove from the heat and stir in the vanilla.
- Add the peanuts and oatmeal and stir until well blended.
- Cover baking sheet with wax paper and drop cookies by the spoonfuls on to the paper. You can really make them the size that you want, big or small or some of both. Set in the refrigerator until firm, remove from the wax paper and place them in a air tight container. If stacking them place a sheet of wax paper between each layer. Store in the refrigerator.

I’ve had some flops of late, too. I photograph, then taste and decide it’s not blog worthy. Always disappointing. But these are classics—and I’ve had them on my baking (or non-baking) list for months. It’s just that I’d be the only one eating them so hard to justify a batch. Hope you’re having a nice weekend. And congrats on the new grandbaby!!!
