In a medium sauce pan add the peanut butter, chocolate chips, honey, and butter. Over medium low heat, melt all the ingredients until completely melted and blended together. Stirring occasionally. Once the ingredients are melted and blended remove from the heat and stir in the vanilla.
Add the peanuts and oatmeal and stir until well blended.
Cover baking sheet with wax paper and drop cookies by the spoonfuls on to the paper. You can really make them the size that you want, big or small or some of both. Set in the refrigerator until firm, remove from the wax paper and place them in a air tight container. If stacking them place a sheet of wax paper between each layer. Store in the refrigerator.
