Apple Oat Streusel Topped Scones

Apple oat streusel topped scones are the perfect way to start my morning. How do you like to start your morning?

This was supposed to be a post about chocolate cake with chocolate mousse filling. But as you can see there is no cake and no chocolate. Ugh!! This time it wasn’t the pictures… this time it was the chocolate mousse filling, it just didn’t want to cooperate.

I really hate it when things don’t go my way!!

Oh well, I really needed to bake some scones anyway. My son had eaten all of the scones and muffins that I had in the freezer for him. So I guess it was just meant to be.

I have made apple scones before, but this is my first time I have added oats and a streusel topping. I had happy smiles all around. The apples make these scones a bit moist. And as always the aroma of apples and cinnamon makes the house smell wonderful.

I have been thinking that I have never made any savory scones before. I have to put that on my to-do list, but for the time being, I love making scones that are filled with fruits and sweetness.

When fall rolls around I love baking with apples and cinnamon and what better way to do that than some lovely scones.

Apple Oat Streusel Topped Scones

Apple Oat Streusel Topped Scones
Ingredients:
2 1/2 cup flour
3/4 cup oats
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup butter
1 egg
2/3 cup milk
1 teaspoon vanilla
1 cup finely chopped apples
Streusel:
1/4 cup brown sugar
1/4 cup flour
1 teaspoon cinnamon
2 tablespoon butter
Directions:
1. Preheat oven to 375.
2. Mix the streusel first. Add 1/4 cup brown sugar, 1/4 cup flour, 1 teaspoon cinnamon, and 2 tablespoon butter to a small bowl. With your fingers or a fork mix ingredients until are well blended. Set aside until the scones are completed.

3. For the scones add flour and butter to a medium-large bowl. Cut the butter in with a pastry cutter or a fork until your it is well blended. The mixture should be such as a crumble.
4. Add the oats, 1/3 cup sugar, baking powder, salt, and cinnamon. Mix until blended
5. Add egg to a small bowl and beat slightly, to this add your milk, vanilla, and apples. Add to the flour and oat mixture. Mix until well blend.
6. On a lightly floured surface knead the dough a few times and form into a 8 to 9-inch circle. To with the streusel and gently press the streusel into the top of the scones. Cut the circle into 8 or 12 scones.
7. Place into the preheated oven and bake for 15 to 18 minutes if making 8 scones a touch less for smaller scones or until lightly browned.
8. Remove from the oven and cool on cooling rack.
