I love to eat oatmeal in the morning for breakfast; we keep a container of quick oats for something fast. In the past year I have made baked oatmeal and crock pot oatmeal, but then I saw a recipe for overnight oatmeal and I knew that I had to try it out.

I looked at several recipes, most of them said not to use the quick oats, but that is all that I had in the pantry. I decided to go ahead and make the overnight oatmeal with the quick oats anyway, because when I get an idea in my head I can’t wait, I have to try it now.
After looking at a several recipes I decided to throw a combination of ingredients together that sounded good to me. Even though I used the quick oats the oatmeal made for a great breakfast. I ate it cold, which I really never thought of eating cold oatmeal before, but to my surprise had a yummy flavor.
Peanut butter and cinnamon has become one of my favorite combination of late, this combo brings the oatmeal a yummy flavor. A bit of honey and vanilla yogurt for sweetness and I was set for breakfast.
Peanut Butter and Cinnamon Overnight Oatmeal
Ingredients:
1/2 cup oats (I used quick oats, but you can your favor)
1/2 cup milk
1/4 cup vanilla yogurt
1/2 teaspoon cinnamon
2 tablespoons peanut butter
Couple of dashes of salt or to taste
2 tablespoons honey
Direction:
1. Place all ingredients in a small jar or container mix together until well blended.
2. Cover with a lid and set in the refrigerator overnight.
3. In the morning remove from refrigerator and eat cold or it can be heated up and eaten that way. You can top with fruit or eat plain either way it will be yummy.

Wow, doesn’t get much easier than that. I wonder if I can use Greek Yogurt, it’s all I have in the house.
