Almond Streusel Scones

Almond Streusel Scones

Usually I make my food during the weekend that I am going to share on blog for the week. I wasn’t quite sure what I wanted to do, it was quite a busy weekend and I really never have enough time to do all the things that I would like to do.

When I started thinking about things that I haven’t made for a while I thought of scones. If you look at my blog at all you will know that one of my favorite things to make is scones.
It’s funny since I had never made a scone before my blogging days, but I have come to love making them and my family really enjoy eating them; so it is the perfect combination. 
My family loves coffee cake with streusel and I love the flavor of almonds. I combined the two to come up with some great scones. I added some almond extract to the scones, added finely chopped almonds, and more almond extract to the icing for a scone that is full of almond flavor… yum!
Almond streusel Scones
Streusel –
1/4 cup brown sugar
1/4 cup all-purpose flour
1 teaspoon cinnamon
2 tablespoon butter softened
1/4 cup finely chopped almonds
Scones-
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 cup salt
1/3 cup sugar
1/2 teaspoon cinnamon
1/2 cup butter
1 egg
1/2 cup plus 1 tablespoon cream
1/4 teaspoon almond extract
Icing-
1 cup powder sugar
Dash of salt
1 teaspoon butter softened
1/2 teaspoon almond extract
1 to 2 tablespoon hot water
Directions:
Streusel-
1. To a small bowl add the brown sugar, flour and cinnamon, mix together. Add the butter to this mixture and mix until well combined. Add the finely chopped almond and mix until well combined.
2. Set aside.
Scones-
1. Preheat the oven to 400 degree F. In a large bowl, stir together flour, baking powder, baking soda, salt, sugar, and cinnamon together. 
2. Cut in the butter until the mixture resembles small peas
3. In a small bowl add the egg and beat slightly. To the egg add the cream and the almond extract.
4. Add the liquid to the flour mixture and with hand gently mix until the dough forms a ball.
5. Place the ball of dough on a lightly flour surface and pat out the dough to form an 8-inch circle. 
6. Take the streusel and spread over top of the scones so it is evenly distributed. With your fingertips pressed the streusel into the dough so that it adheres to the dough.
7. Take a pizza cutter or a sharp knife cut into 8 to 12 wedges. Places on a lightly greased baking sheet.
8. Place in the preheated 400 degree oven for about 10 to 12 minutes.
9. Remove from oven and cool on cooling rack until cooled.
Icing-
1. Add the powder sugar, dash of salt, into a small bowl mix well. Add the almond extract, butter, and 1 tablespoon of hot water. Stir until smooth and the right consistency add more hot water if the icing is too thick.
2. Drizzle over cooled scones.
3. Enjoy!

    Nice scone, and even better with the streusel…this would be great with a cup of coffee…

    I love making scones too! And eating them! These are almond-packed and so delicious looking! I can’t resist anything with streusel.
