Italian Sausage and Tortellini Skillet

Italian Sausage and Tortellini Skillet, an easy skillet dish that is filled with cheesy tortellini and bites of mild Italian sausage.

Ingredients

  • 5 links Italian sausage about 19 ounces
  • 19 ounces cheese tortellini
  • 2 tablespoons olive oil
  • 1/2 large green pepper finely chopped
  • 1/2 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 cup spinach chopped
  • 14.5 ounce can diced tomatoes
  • 15 ounce can tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • salt to taste if needed

Instructions

  • Cut the Italian sausage links into 1/2 to 1-inch pieces. In a large skillet cook the sausage over medium heat until no longer pink. Stir frequently to brown evenly. Remove the sausage from the skillet and set it aside.
  • While preparing the sausage and sauce cook the tortellini according to the directions on the package.
  • When the sausage is removed from the skillet wipe out any excess grease. Add the olive oil and heat over medium heat. Add the green peppers, onions, and garlic and saute until tender about 6 to 8 minutes. The last couple of spinach and let it wilt.
  • Add the diced tomatoes, tomato sauce, and tomato paste and mix in.
  • Stir in the Italian seasoning and salt (if the salt is needed). Cook for 5 to 10 minutes.
  • Add in the sausage and tortellini and simmer until the sausage and tortellini are heated through.

Notes

  1. I like Italian sausage links for this recipe. If you prefer you can use bulk sausage for the recipe.
  2. If using links cut the links into 1/2 to 1-inch pieces to help the sausage brown faster. Leaving on the casing will help keep the shape of the sausage. 
  3. Cook the tortellini using the directions on the package.
  4. Leftovers can be stored in the refrigerator in an airtight container for 3 to 4 days.
