Baked Chicken Cordon Bleu

Chicken Cordon Bleu is made with chicken, ham, and Swiss cheese, the ham and cheese are rolled up in the center of the chicken, covered in bread crumbs and then baked, a perfect weekend meal.

Ingredients

  • 4 boneless skinless chicken breast
  • 1 tablespoon butter melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried oregano
  • 4 slices ham about 4 ounces
  • 4 slices Swiss cheese about 2 ounces

Instructions

  • Preheat the oven to 350 degrees F.
  • Combine the chicken broth, melted butter, and garlic in a bowl and set aside. In another bowl combine the bread crumbs, Parmesan cheese, and paprika
  • Place each chicken breast between 2 sheets of plastic wrap and pound to 1/4 inch with a meat mallet or a rolling pin. Sprinkle both sides of the chicken with salt, pepper, and oregano.
  • Place a slice of ham and cheese on each chicken breast within 1/2 inch of the edge. Tuck in the sides of the breast and roll up tight like a jelly roll and secure with a couple of toothpicks
  • Dip each roll in the chicken broth mixture and dredge in the bread crumb mixture. Place roll seam side down in the baking sprayed with a non-stick cooking spray. Bake 30 to 35 minutes or until golden brown with the cheese melted and the chicken no longer pink.

Notes

Recipe Notes:
  1. Use toothpicks to secure the chicken from opening.
  2. Use a meat mallet or rolling pin to flatten out the chicken.
  3. If you don't like Swiss cheese, you can use mozzarella or provolone
