Taco Shrimp Pasta

  • 1 pound shrimp shells removed and de-veined
  • Olive oil
  • 2 teaspoon chili powder
  • 2 teaspoons cumin
  • 3 cloves garlic minced
  • 14.5 ounce can diced tomatoes
  • 1 cup cheddar cheese
  • Avocado for garnish (optional)
  • 2 cups uncooked pasta your favorite


  1. Cook the pasta according to the directions on the box
  2. Toss cleaned shrimp with chili powder and cumin. Add enough olive oil to light coat the bottom of a skillet. Add the garlic and coated shrimp to the skillet Cook over medium heat until shrimp are just about completely cooked through (completely opaque and pink).
  3. Add the tomato sauce and cheddar cheese. Melt the cheese and continue to cook shrimp until done.
  4. Toss with pasta and serve.
