Citrus Cranberry Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup lemon juice
  • 1/4 cup orange juice
  • Zest from one lemon
  • Zest from one orange
  • 2/3 cup sugar
  • 1/4 cup oil
  • 1 1/2 cup chopped cranberries
  • icing
  • 1 1/2 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 2 to 3 tablespoons milk

Instructions

  • Preheat the oven to 400 degrees F. Grease or add paper liners to muffin tins.
  • Combine the flour, baking powder, baking soda, salt. In another bowl combine the eggs, milk, lemon juice, orange juice, zest from the lemon and orange, sugar, and oil. Add the wet ingredients to the dry ingredients and mix just until they are combined. Add the cranberries and fold in.
  • Fill the prepared muffin tins about 2/3 full. Place the muffins in the preheated oven and bake for 15 to 17 minutes. Remove from oven and cool completely on a cooling rack.
  • Icing- While the muffins are cooling prepare the icing. Combine the powdered sugar and cinnamon. Gradually add the milk until you have the right consistency.
  • Once the muffins are completely cooled drizzle with the icing.
