Cranberry Nut Bread

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup oil
  • 3/4 cup orange juice
  • 1 1/2 cups cranberries chopped
  • 1/2 cup pecans chopped

Instructions

  • Preheat the oven to 350 degrees F. Grease and flour a 9x5-inch loaf pan.
  • Mix flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Mix the egg, orange juice, orange zest, and oil in another bowl.
  • Add the egg mixture to the dry ingredients and mix just until combined.
  • Add the cranberries and nuts and fold in.
  • Spread the batter in the prepared loaf pan.
  • Bake in the preheated oven for 50 to 55 minutes or until a wooden pick is inserted in the middle of the loaf it comes out clean or with a few moist crumbs.
  • Cool the bread in the loaf pan for about 5 minutes. Remove the bread from the loaf pan and cool on a cooling rack.

Notes

  1. The oven should be preheated and ready when the bread is spread into the loaf pan.
  2. Chop the cranberries and nuts before starting the recipe. They need to be folded into the batter as soon as the wet and dry ingredients are combined. 
  3. For easy removal grease and flour the loaf pan. 
  4. Let the bread set in the loaf pan for about 5 minutes after it is done baking. After the 5 minutes remove the bread and let it cool on a cooling rack.
  5. The bread can be frozen in an airtight container for up to 3 months.
