Ingredients

  • 3 tablespoons brown sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons vegetable oil
  • 4 pounds pork tenderloin
  • 1 cup chicken broth
  • 2 cups ketchup
  • 1 teaspoon onion powder
  • 1/4 cup Worcestershire sauce
  • 4 tablespoons brown sugar
  • 2 tablespoons vinegar
  • 1 tablespoons yellow mustard

Instructions

  • Preheat the oven to 325 degrees F
  • Make the rub. Combine the 3 tablespoons brown sugar, salt, smoked paprika, 1 teaspoon onion powder, garlic powder, cumin, and chili powder.
  • Rub the mixture over the entire meat on all sides and set aside.
  • In a large Dutch oven or heavy pot add the oil and heat over medium heat.
  • Once the oil is hot place the pork into the Dutch oven brown/sear the meat on all sides. Add more oil if needed.
  • Remove the meat from the heat and add the chicken broth (do not pour over top of the meat).
  • Place into the preheated oven and roast for 1 1/2 to 2 hours or when the meat is no longer pink inside.
  • Remove the meat from the Dutch oven and discard the chicken broth.
  • With 2 forks shred the meat. Place the shredded meat back into the pot.
  • Pour the bbq sauce over the meat and mix well.
  • Reduce the oven temperature to 300 degrees and place the meat back into the oven. Bake for 30 minutes.
  • Remove from the oven and serve.

Notes

  1. Do not remove the fat from the top of the meat before roasting, it will keep the meat moist. Once the meat is roasted remove all fat.
  2. Add a rub to the meat for more flavor.
  3. Shred the meat with 2 forks to make the shredding process faster.
  4. Add the bbq sauce and bake for 30 more minutes to bake in the bbq flavor.
