Congo Bars

Congo bars a sweet treat that makes a great dessert or an afternoon snack. These soft chewy bars make a 9 by 13-inch pan, so there will be plenty to go around.

Ingredients

  • 2 3/4 cups flour
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup butter
  • 2 cups brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla
  • 12 ounces semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350 degrees F. Lightly grease a 9 by 13-inch baking pan.
  • Sift together the flour, baking powder, and salt in a small bowl and set aside.
  • In a medium bowl add the brown sugar and butter with an electric mixer mix until cream.
  • Adding one egg at a time mix each egg until combined
  • Mix in the vanilla.
  • Add the flour mixture and mix until well blended.
  • Mix in the chocolate chips.
  • Pat the dough into the prepared pan and place in the preheated oven.
  • Bake for 20 to 25 minutes or until the bars are golden brown over top.
  • Remove from the oven and cool on a cooling rack.

Notes

  1. Take the butter and eggs out of the refrigerator 20 to 30 minutes before you start the recipe.
  2. Use butter for a richer flavor. 
  3. I use semi-sweet chips but milk chocolate or dark chips can be used.
  4. To change up add chopped pecans or walnuts to the batter.
  5. The bars can be frozen. Cut into bars and place in a airtight freezer container.
