Pumpkin muffins with Peanut and Oats Streusel

  • 2 cups flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 cup pumpkin puree
  • 1 egg
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
  • Streusel-
  • 1/4 cup flour
  • 1/4 cup oats
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1/4 cup butter melted
  • 1/4 cup finely chopped peanuts


  • Preheat oven to 400 degrees F.
  • For the streusel - In a medium bowl sift together the flour, oats, cinnamon, and sugar. Add the melted butter and mix until well blended. Set aside until you have muffin batter mixed together.
  • Sift together in a large bowl the flour, sugar, baking powder, baking soda, salt, and spices. In a small bowl slightly beat the egg and then add the pumpkin, buttermilk, oil, and vanilla. Once it mixed together add this to the dry ingredients. Mix until blended.
  • In a prepared muffin tin (paper liners or lightly greased) fill the muffin tins 2/3 full. Sprinkle with the streusel and gently press lightly with fingers.
  • Bake in the preheated oven for 15 to 17 minutes


If you would like to have a bit sweeter muffins add 1/4 cup sugar.
