- 1 avocado
- 2 clove garlic roughly chopped
- 1 tablespoon onion roughly chopped
- 1 - 2 tablespoons white wine vinegar
- 1 tablespoon fresh lime juice
- 6 tablespoon olive oil
- 1/2 teaspoon Salt or to taste
- 1/8 teaspoon pepper or to taste
In a food processor add the avocado, garlic, onion, 1 tablespoon white wine vinegar, lime juice, oil oil, salt, and pepper and blend until smooth.
Stir in 2 to 4 tablespoons of water for a thinner dressing.
Serve with your favorite salad greens and vegetables.
- Use a ripe avocado for the creamiest results.
- Use a food processor or blender, I like to use a mini food processor. It works great.
- If the dressing is too thick stir in a few tablespoons of water.
- Store in an airtight container for up to a week.
