Ingredients

  • 1 avocado
  • 2 clove garlic roughly chopped
  • 1 tablespoon onion roughly chopped
  • 1 - 2 tablespoons white wine vinegar
  • 1 tablespoon fresh lime juice
  • 6 tablespoon olive oil
  • 1/2 teaspoon Salt or to taste
  • 1/8 teaspoon pepper or to taste

Instructions

  • In a food processor add the avocado, garlic, onion, 1 tablespoon white wine vinegar, lime juice, oil oil, salt, and pepper and blend until smooth.
  • Stir in 2 to 4 tablespoons of water for a thinner dressing.
  • Serve with your favorite salad greens and vegetables.

Notes

  1. Use a ripe avocado for the creamiest results.
  2. Use a food processor or blender, I like to use a mini food processor. It works great.
  3. If the dressing is too thick stir in a few tablespoons of water.
  4. Store in an airtight container for up to a week.
