Taco Shrimp Pasta

  • 1 pound shrimp shells removed and de-veined
  • Olive oil
  • 2 teaspoon chili powder
  • 2 teaspoons cumin
  • 3 cloves garlic minced
  • 14.5 ounce can diced tomatoes
  • 1 cup cheddar cheese
  • Avocado for garnish (optional)
  • 2 cups uncooked pasta your favorite


  • Cook the pasta according to the directions on the box
  • Toss cleaned shrimp with chili powder and cumin. Add enough olive oil to light coat the bottom of a skillet. Add the garlic and coated shrimp to the skillet Cook over medium heat until shrimp are just about completely cooked through (completely opaque and pink).
  • Add the tomato sauce and cheddar cheese. Melt the cheese and continue to cook shrimp until done.
  • Toss with pasta and serve.
