Spiced French Toast with Peach Compote

Ingredients

  • Spiced French toast-
  • 3 eggs
  • 3/4 cup milk
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla
  • 1 tablespoon honey
  • 6 slices of bread such as Italian about 1-inch thick
  • Butter for frying
  • Peach compote-
  • 3 medium peaches about 2 1/4 to 2 1/2 cups
  • 1/4 cup water
  • 2 tablespoons brown sugar
  • 1/4 teaspoon cinnamon

Instructions

  • Spiced French toast-
  • Blend together the egg, milk, cinnamon, nutmeg, vanilla, and honey in a shallow dish. Dip the bread in the egg mixture making sure that each side is coated well. Melt butter in a skillet and brown each side of the French toast. Serve immediately.
  • Peach compote-
  • Slice peaches thinly and add them to a small sauce pan. Add the water, brown sugar, and cinnamon. Bring the mixture to a boil and reduce heat. Continue to cook until the peach have thickened and peaches are soft, about 8 to 10 minutes.
  • Serve over French toast or it could be used for an ice cream topping.
