Cranberry Dab Of Dough Cookies

Ingredients

  • Cookie Dough-
  • 2 cups brown sugar
  • 1 cup butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup sour cream
  • 1/2 cup boiling water
  • 4 cups flour
  • 1 teaspoon soda
  • 1/4 teaspoon salt
  • Cranberry filling-
  • 1 cup chopped cranberries
  • 1/2 cup sugar
  • 1 tablespoon corn starch
  • 1/2 cup water
  • 1/2 cup orange juice
  • 1 teaspoon vanilla

Instructions

  • Filling-
  • In a medium saucepan combined all of the ingredients.
  • Bring to a boil over medium heat. Continue to cook until the mixture reduces by half or a little more and become very thick (jelly-like).
  • Remove from heat and cool completely.
  • Cookie Dough-
  • Preheat oven to 350 degrees F. Grease baking sheets.
  • In a large mixing bowl beat the butter and sugar together with an electric mixer.
  • Add the eggs and mix in.
  • Mix in the vanilla and the sour cream.
  • To this mixture add the boiling water and mix until combined.
  • Sift together the flour, baking soda, and salt. Add this to the dough and mix until well combined.
  • The dough will be very soft, but that is how it should be.
  • Drop the dough by teaspoons onto the prepared baking sheet. With the back of the teaspoon make a small well in the dough.
  • Put a small amount of the cranberry filling in the well. (about 1/2 teaspoon)
  • Take a dab of the cookie dough and set on top of the filling.
  • Place the cookies in the preheated oven and bake 12 to 14 minutes or until the bottoms are slightly browned.
  • Remove from the oven and cool completely.
  • These cookies freeze nicely.
