Slow Cooker Potato Leek Soup

Ingredients

  • 3 leeks
  • 1 tablespoon olive oil
  • 8 cups diced potatoes
  • 1 cup sliced carrots
  • 3 stalks chopped celery
  • 2 bay leaf
  • 32 ounces vegetable broth
  • 1 cup heavy cream
  • 8 ounces sharp cheddar cheese
  • 1 1/2 teaspoons salt or to taste
  • 1/4 teaspoon pepper or to taste

Instructions

  • Wash and clean the leeks. Cut in thin slices. Place the tablespoon of olive oil in a skillet and saute the leeks until tender. Remove from the heat and set aside.
  • Peel and dice the potatoes, slice the carrots, and chop the celery. Add the potatoes, carrots, celery, sauteed leeks, and bay leaves. Stir in the broth.
  • Turn the slow cooker on low and let cook for about 6 to 7 hours or until the potatoes are tender. With a potato masher mash some of the potatoes (your desired amount). 
  • Stir in the cream and the cheese. Continue to cook until the cheese is melted.  Season with salt an pepper to taste.

Notes

  1. Use a large enough slow cooker. This makes a large batch of soup.
  2. The time may vary depending on what size of slow cooker is used. 
  3. Make sure to clean the leeks before putting them in the soup. 
  4. Season the soup with salt and pepper after the cheese has melted. Also, the soup should be tasted before seasoning it. 
  5. The soup can be stored in the refrigerator for 3 to 4 days. 
  6. This is not recommended for freezing.
