Ingredients

  • 1/2 cup cranberries chopped
  • 1 small clementine chopped
  • 1/2 cup pecans chopped
  • 1 1/2 cup flour
  • 1 cup old fashion oats
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup oil

Instructions

  • Preheat oven to 400 degrees F. Grease muffin tins
  • In a bowl mix together the flour, oats, sugar, salt, and baking powder.
  • Add the cranberries, clementine, and pecans and toss together
  • In another bowl combine the egg, milk, and oil. Add to the flour mixture and stir just until the dry ingredients are moistened.
  • Fill the prepared muffin tins 3/4 full. 
  • Bake in the preheated oven for 18 to 20 minutes. Remove from oven and cool on cooling rack for 2 to 3 minutes and remove the muffins from tins. Continue to cool on cooling racks.
  • These muffins freeze well.
