Jam Shortbread Bars

Jam Shortbread Bars a sweet crumbly bar that is made with five simple ingredients. Super easy to make and one of my favorite bars.

Ingredients

  • 1 3/4 cup all-purpose flour
  • 1/2 cup sugar
  • 1/8 teaspoon salt
  • 3/4 cup butter 12 tablespoons
  • 1 cup jam your favorite

Instructions

  • Preheat oven to 375 degrees F. Grease an 8-inch baking pan.
  • Combine the flour, sugar, and salt in a medium bowl. Work in the butter with a pastry cutter, fork, or fingers.
  • Reserve 1 cup of the dough for the topping. Press the remaining dough in the prepared baking pan.
  • Place in the oven and bake the crust for 8 minutes. Remove from the oven and spread the jam over the crust leaving about 1/4 border. Crumble the remaining dough over the top of the jam.
  • Place back in the oven and bake 20 to 25 minutes or until the edges are golden brown.
  • Place bars on a cooling rack and cool. Once they are cooled cut into bars.

Notes

  1. The butter is the most important ingredient in this recipe. Use butter that is soft, but not melted. You will want to have butter that you are able to work into the dough easily.
  2. Cool the bars before cutting them. 
  3. You can freeze the bars in an airtight freezer container.
