Preheat oven to 375 degrees F. Cook the egg noodles using the directions on the package
In a large skillet melt the butter over medium heat. Add the flour and stir until well combined and smooth about 1 to 2 minutes.
Slowly add the milk and cream, stirring constantly. Cook until the mixture starts to thicken about 1 to 2 minutes.
Add the sour cream and 2 cups of the cheddar cheese and stir in. Continue to stir until the cheese is melted and the mixture is smooth,
Add the noodles, ham, and peas, and carrots, stir in.
Pour into a 9x13-inch baking pan. Top with the remaining cheese.
Place in the preheated oven and bake for 25 to 30 minutes or until the cheese is melted and starting to brown.
