Ingredients

  • 3 tablespoons butter
  • 1 cup carrots sliced
  • 2 stalks celery chopped
  • 1 large onion chopped
  • 1 large potato cubed
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 1/2 cups low sodium chicken broth
  • 1 1/2 cups chicken cut into bite-size pieces
  • 1/2 cup frozen peas
  • 24 ounces tater tots
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees F.
  • Over medium heat in a large skillet add the butter, carrots, celery, onions, and potatoes sautee until the vegetables begin to soften about 7 to 10 minutes.
  • Add the flour and stir in until the flour is combined.
  • Turn the heat to medium-high and slowly add the milk and the broth stirring continuously. Cook until the liquid starts to thicken.
  • Add the chicken and the peas and stir in. Pour the filling into a 9 by 13-inch baking dish.
  • Arrange the tater tots over top of the filling.
  • Place the casserole in the preheated oven. Bake 30 to 40 minutes or until the tater tots are browned.
  • Remove from the oven and serve

Notes

  1. Saute the carrots, celery, onions, and potatoes in the butter until they start to soften.
  2.  Use low sodium broth for a healthier choice.
  3. To reheat cover the casserole with aluminum foil and heat in a 350-degree oven preheat oven unit heated or heat in the microwave until heated.
  4. The casserole can be frozen to keep longer.
