Ingredients
2cupsflour
3/4cupsugar
1tablespoonbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
1teaspooncinnamon
1/2teaspoonginger
1/2teaspoonnutmeg
1/4teaspooncloves
1cuppumpkin puree
1egg
1cupbuttermilk
1/3cupvegetable oil
1teaspoonvanilla
Streusel-
1/4cupflour
1/4cupoats
1teaspooncinnamon
1/4cupsugar
1/4cupbuttermelted
1/4cupfinely chopped peanuts
Instructions
Preheat oven to 400 degrees F.
For the streusel - In a medium bowl sift together the flour, oats, cinnamon, and sugar. Add the melted butter and mix until well blended. Set aside until you have muffin batter mixed together.
Sift together in a large bowl the flour, sugar, baking powder, baking soda, salt, and spices. In a small bowl slightly beat the egg and then add the pumpkin, buttermilk, oil, and vanilla. Once it mixed together add this to the dry ingredients. Mix until blended.
In a prepared muffin tin (paper liners or lightly greased) fill the muffin tins 2/3 full. Sprinkle with the streusel and gently press lightly with fingers.
Bake in the preheated oven for 15 to 17 minutes
Notes
If you would like to have a bit sweeter muffins add 1/4 cup sugar.
