Pumpkin muffins with Peanut and Oats Streusel

  • 2 cups flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 egg
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
  • Streusel-
  • 1/4 cup flour
  • 1/4 cup oats
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1/4 cup butter melted
  • 1/4 cup finely chopped peanuts


  1. Preheat oven to 400 degrees F.
  2. For the streusel - In a medium bowl sift together the flour, oats, cinnamon, and sugar. Add the melted butter and mix until well blended. Set aside until you have muffin batter mixed together.
  3. Sift together in a large bowl the flour, sugar, baking powder, baking soda, salt, and spices. In a small bowl slightly beat the egg and then add the butter milk, oil, and vanilla. Once it mixed together add this to the dry ingredients. Mix until blended.
  4. In a prepared muffin tin (paper liners or lightly greased) fill the muffin tins 2/3 full. Sprinkle with the streusel and gently press lightly with fingers.
  5. Bake in the preheated oven for 15 to 17 minutes

Recipe Notes

If you would like to have a bit sweeter muffins add 1/4 cup sugar.
