Avocado Vinaigrette

  • 1 avocado
  • 1 clove garlic
  • 1 tablespoon onion
  • 2 tablespoons white wine vinegar
  • 6 tablespoon olive oil
  • Salt and pepper to taste


  • In a food processor add the onion and garlic, process the two until finely chopped. Add the avocado and process until all ingredients are smooth and cream. Add the vinegar one tablespoon at a time and process after each tablespoon. Add the olive oil also one tablespoon at a time processing after each tablespoon. Once the oil is combine blend in the salt and pepper to taste.
  • Serve with your favorite salad greens and vegetables.
