Jalapeno Popper Chicken Casserole

Ingredients

  • 8 ounces cream cheese
  • 1/2 cup sour cream
  • 1 cup chicken broth
  • 1/4 to 1/2 cup milk
  • 2 to 3 cups of cheddar cheese
  • 3 to 4 cups cooked chicken that has been cubed
  • 1 medium jalapeno pepper thinly sliced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 8 ounce of cooked pasta al dente
  • Salt and pepper to taste
  • Corn flake crumbs or bread crumbs

Instructions

  • Preheat oven to 350 degrees F.
  • Place the cream cheese and sour cream in a large skillet. Over medium heat melt the two ingredients together.
  • Once they are melted slowly pour in the chicken broth and milk, stirring as you pour. Mix until all is blended well.
  • Add the cheese and mix until the cheese is melted and blended in to the sauce.
  • Sprinkle the onion and garlic powder over the mixture and blend in.
  • Add the chicken and jalapenos and stir in until well incorporated.
  • Mix in the pasta and season with the salt and pepper to taste.
  • Pour the casserole into a 9 by 13-inch baking dish.
  • Sprinkle with corn flake or bread crumbs
  • Place the casserole into the preheated oven and bake for 20 to 25 minutes or until edges are lightly browned.
