Apple Oatmeal Pancakes

  • 1 apple about 2/3 cup shredded apple I used a Granny Smith apple
  • 1 cup flour
  • 1 cup quick cook oats
  • 1/2 teaspoon cinnamon
  • 1 tablespoon baking powder
  • 2 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 tablespoons oil
  • 1 cup milk
  • Butter for frying


  1. Combine the dry ingredients and mix together. In another bowl add the wet ingredients along with the shredded apple and mix together.
  2. Add the wet ingredients to the dry ingredients and mix just until combined. The mixture will still be a bit lumpy.
  3. Heat a griddle or a skillet over medium-low heat. Add the butter to the griddle or skillet and make coat the frying area. Pour about a 1/3 cup of the batter onto the prepared griddle.
  4. Cook until the top of the pancake bubbles and the underside is lightly browned about 3 minutes. Turn over and continue to fry until the underside is browned. Making sure that the center of the pancake is cooked through.
  5. Serve immediately with your favorite syrup.
