Open Face Cheese Tomato Egg Sandwich

Ingredients

  • 1 or 2 slices bread Italian or French works well
  • 1 tablespoon softened butter
  • celery salt or fresh herbs to taste
  • Slices of cheese it can be your favorite
  • 2 to 4 slices of sliced tomato
  • olive oil
  • 1 to 2 eggs fried to order

Instructions

  • Butter both sided of the slices of bread. Heat a skillet or a grill pan.
  • Heat the skillet or pan over medium heat. Add the buttered bread and grill until golden brown and turn and repeat.
  • While the bread is grilling, brush the tomatoes with olive oil and add to the skillet or grill pan. Grill until they are just turning light brown.
  • Once the bread is golden brown on both sides top with a couple of your favorite slices of cheese. Let that melt and top with your grilled tomato slices. Fry an egg to your liking (I like mine easy over) Place egg on top of the tomatoes. Season with salt and pepper. Add additional herbs at this time if you like. Serve
