Carrot Apple Cookies

  • 1 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 cups flour
  • 2 cups old fashion oats
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon cinnamon
  • 1/2 cup shredded apples
  • 1/2 cup shredded carrots
  • 3/4 cup pistachios


  1. Preheat oven to 350 degrees F. Prepare a baking sheet by lining it with parchment paper or by greasing the baking sheet.
  2. In a large bowl combine the butter and the sugars with an electric mixer, mix until well blended. Add the eggs and beat in.
  3. Combine the flour, oats, baking soda, salt, and cinnamon. Add to the wet ingredients and mix until ingredients are combined. Add the shredded apple, carrots, and pistachios and stir in with a wooden spoon or by hand.
  4. Drop by teaspoons on prepared baking sheets about 2-inches apart.
  5. Bake in preheated oven for 12 to 14 minutes or until slightly browned around the edges.
  6. Remove from oven cool on baking sheet for 1 or 2 minutes and move to cooling rack and cool completely.
