Cream Cheese Peach Muffins

Ingredients

  • 4- ounce cream cheese
  • 1 cup sugar
  • 1/4 cup butter
  • 2 eggs
  • 2 1/4 cup flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 3/4 cup milk
  • 1 1/4 cup diced peaches I used fresh but you could use frozen
  • Icing-
  • 1 1/2 cups powdered sugar
  • 3/4 to 1 teaspoon cinnamon
  • 2 to 3 tablespoons milk

Instructions

  • Preheat oven to 375 degrees F. Grease or place paper liners into the muffin tins
  • In a medium bowl cream cheese and sugar with an electric mixer. Add butter and mix until light and fluffy.
  • Add one egg at a time mix until mixed in.
  • Combine the dry ingredients together. Add half of the dry mixture to the wet mixture. Mix until the flour mixture is mixed in.
  • Add the milk and mix in. Add the remainder flour mixture and mix until well combined.
  • Fold in the diced peaches.
  • Spoon mixture into prepared muffin tins. Place into the preheated oven and bake 14 to 16 minutes or until the muffins spring back when lightly touched.
  • Remove from muffin tins and cool completely.
  • Icing-
  • Add the powdered sugar and cinnamon and mix together. Gradually add the milk until you have the right consistency.
  • Drizzle over the muffins.

Notes

If you are icing these muffins, they are best eaten fresh. The icing will get a little runny if they sit for a long period of time. Or you may drizzle with icing as you eat them.
