  • 5 links hot Italian sausage
  • 2 tablespoon olive oil
  • 1 large red bell pepper
  • 1` large green bell pepper
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 cup cherry tomatoes
  • 1 tablespoon chopped basil
  • 2 cups uncooked penne pasta
  • 4 ounces mozzarella cheese


  • Cut the Italian sausage links into bites size pieces about 1-inch. In a large skillet cook the sausages until no longer pink. Remove from the skillet and set aside
  • While cooking the Italian sausage cook the pasta according to the directions on the box. Once the pasta is done, drain and set aside.
  • Once the sausage is removed from the skillet pour of any grease that may be in the skillet. Add 2 tablespoons of olive oil along with the peppers and onion. 
  • Cook over medium heat until peppers and onions are tender. add the garlic, cherry tomatoes, and basil and cook another 1 to 2 minutes or until the tomatoes start to get a little soft.
  • Add the Italian sausage, pasta and toss until well mixed. Mix in the mozzarella cheese. Heat until the cheese is melted and the sausage and pasta are heated through. Serve
