Ingredients

  • 2 medium potatoes cubed
  • 10 grape/cherry tomatoes
  • 1 cup green peppers chopped
  • 1 cup red peppers chopped
  • 1/2 cup onion chopped
  • 7 ounces smoked sausage sliced
  • 2 - 3 tablespoons butter`
  • 4 large eggs
  • 1/2 - 1 teaspoon celery salt
  • Black pepper to taste

Instructions

  • In a skillet melt the butter over medium heat and add the potatoes. Cook eggs for 5 to 10 minutes or until they are starting to soften slightly. 
  • Add the peppers and onion and continue to cook for another 5 to 10 minutes Add the sausage and tomatoes and continue to cook until the vegetables are tender and the sausage is heated through. Season the mixture with the celery salt and pepper
  • Fry the eggs in another skillet and set on top of the sausage and veggies. 

Notes

I have made the skillet with cooking the eggs with the vegetables, but the vegetables and sausage would start to burn since it takes time for the eggs to cook.
