Orange Cardamom Bread

Ingredients

  • 1/3 cup butter
  • 1 1/3 cup sugar divided
  • 2 large eggs
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon cardamom
  • 1/2 cup milk
  • Zest from 1 orange
  • Juice from 1 orange

Instructions

  • Grease and flour a 9 by 5-inch loaf pan. Preheat the oven to 350 degrees F.
  • With an electric mixer mix the butter and 1 cup of the sugar together until well blended.  Add the eggs and mix in.
  • Sift together the flour, baking powder, salt, and cardamom add to butter mixture and mix in. Add the milk and the orange zest and mix in.
  • Pour the batter into the prepared pan and bake for 40 to 45 minutes or until a wooden pick inserted in the middle of the bread comes out clean.
  • While the bread is baking mix the orange juice from the orange with the remaining 1/3 cup of sugar and mix well. Set aside. When the bread comes out of the oven pour the mixture over the top of the hot bread.
  • After the orange juice mixture is poured over the bread let the bread cool for an hour in the pan and the then remove and cool completely.

Notes

  1. Grease and flour then line with parchment paper for easy removal. I have baked this without parchment paper. Use a large spatula to loosen the bottom of the bread.
  2. Check for doneness with a wooden pick. If it comes out clean, the bread is done. Check in the center of the loaf. 
  3. Mix the orange juice and sugar while the bread is baking. Make sure to stir a few times to help dissolve the sugar.
  4.  The bread freezes well. Freeze in an airtight container.
