Ingredients

  • 4 medium tomatoes
  • 4 ounces mozzarella cheese
  • 1 tablespoon thinly sliced red onion
  • 1/4 cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 clove garlic
  • 1 tablespoon fresh basil slightly chopped
  • 1 teaspoon fresh oregano
  • Salt and Pepper to taste

Instructions

  • Wash and dry the tomatoes. Cut the tops out of the tomatoes. Cut each tomato into wedges. Slice the mozzarella cheese and cut into desired sizes. Slice the onion. Place the tomato wedges, mozzarella, and onions into a large bowl.
  • Add the garlic, fresh basil, and oregano into a mini food processor. Process until the ingredients are chopped. Add the olive oil and red wine vinegar and process until the garlic, basil, and oregano are blended with the olive oil and red wine vinegar.
  • Pour the dressing over the tomato mixture and toss until the tomatoes are well coated. Season with salt and pepper to taste. Can be eaten right away, but it is best to refrigerate for an hour or two before serving.
