Ingredients

Southwest Chicken

  • 2 Boneless Skinless Chicken Breast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Southwest salad

  • 1 head Romaine lettuce
  • 3/4 cup tomatoes chopped
  • 1 avocado sliced
  • 1/2 cup corn
  • 1 cup black beans rinsed
  • 1 lime sliced

Southwest Ranch Dressing

  • 1 clove garlic minced
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 2 tablespoons lime juice
  • 1/4 teaspoon cumin
  • 2 teaspoons dried parsley

Instructions

Southwest chicken

  • Combine the cumin, garlic powder, onion powder, chili powder, paprika, salt, and pepper.
  • Take the seasonings and rub over chicken.
  • In a cast iron skillet heat the olive oil over medium heat, place the chicken in the heated skillet.
  • Brown chicken on both sides and continue to cook until chicken is not pink in the center, about 15 minutes.

Southwest Ranch Dressing

  • Add the minced garlic, mayo, sour cream, buttermilk, lime juice, cumin, and parsley in a food processor.
  • Pulse the ingredients until well blended.

Assembling the salad

  • Wash and dry the Romaine lettuce. Tear into small pieces. Place lettuce on a salad place
  • Top with the chopped tomatoes, corn, black beans, slices of avocado, and slices of lime
  • Slice the chicken and place 1/2 chicken breast on each salad. 
  • Drizzle the Southwest ranch dressing over the salad.
