Apple Streusel Muffins

Apple Streusel Muffins are moist delicious muffins that are perfect with a glass of milk for breakfast or an afternoon snack. The muffins are topped with brown sugar streusel and vanilla icing.

Ingredients

Streusel Topping

  • 1/3 cup packed brown sugar
  • 1 tablespoon flour
  • 1 1/2 teaspoons cinnamon
  • 1 tablespoon butter softened
  • 1/4 cup walnuts chopped

Muffins

  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup butter melted
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 1 cup apples chopped

Icing

  • 3/4 cup powdered sugar
  • dash salt
  • 1 teaspoon butter melted
  • 1/4 teaspoon vanilla
  • 1 to 2 tablespoons milk

Instructions

  • Preheat the oven to 375 degrees F. Grease or line the muffin tins with paper liners
  • Make the streusel. Combine the brown sugar, flour, and cinnamon. Add the 1 tablespoon butter and cut in until the ingredients are well combined. Toss in the walnuts. Set this aside.
  • In a large bowl combine the flour, sugar, baking powder, baking soda, and salt.
  • In a different bowl add the eggs, 1/2 cup butter, milk, and vanilla.
  • Add the wet ingredients to the dry and mix just until combined. Fold in the apples
  • Divide the batter between 12 prepared muffin cups. The muffin cups should be around 2/3 to 3/4 full.
  • Place in the preheated oven and bake for 18 to 20 minutes or until a wooded pick inserted in the center comes out clean or with a few moist crumbs.
  • Cool the muffins in the tin for about 5 minutes, then remove them from the tins and set them on a cool rack. Cool completely.
  • Once the muffins are cooled, make the icing. Combine the powdered sugar, 1 teaspoon butter, salt, and vanilla. Beat in the milk until you have the right consistency to drizzle over top of the muffins.

Notes

  1. Use real butter for better-tasting muffins.
  2. Cut the apples into small slices. Trying to make the pieces uniform so that the apples bake evenly.
  3. Check for done using a wooden pick inserted in the middle of the muffin. If the pick comes out clean or with a few moist crumbs the muffins are done. 
  4. These muffins freeze well. Freeze in an airtight container for up to 3 months.
