Slow-Cooker Potato Leek Soup

Ingredients Needed

Potatoes Leeks Olive Oil Carrots Celery  Bay Leaf Vegetable Broth Heavy Cream Cheddar Cheese Salt and Pepper

Step One

Sautee the sliced leeks with olive oil in a skillet

Step Two

Add the celery, carrots, potatoes, and sauteed leeks to a large slow-cooker

Step Three

Add the vegetable broth to the slow-cooker.

Step Four

Cook for 6 to 7 hours or until the potatoes are cooked through.

Step Five

Use a potato masher to mash some of the potatoes

Step Six

Add the cheddar cheese and cream to the soup

Step Seven

Continue to cook until the cheese is melted. Season with salt and pepper
