Baked Leftover Mashed Potatoes with Eggs

Ingredients

Leftover Mashed Potatoes Ham Sour Cream Cheddar Cheese Eggs Salt and Pepper

Add the mashed potatoes, ham, cheddar cheese, and sour cream to a medium bowl. 

Step One

Mix the mashed potatoes, ham, cheddar cheese sour cream until well combined 

Step Two

Grease two 10-inch ramekins/custard cups with butter. 

Step Three

Divide the potato mixture between the two containers 

Step Four

Bake in a 350-degree F oven until the edges of the potatoes start to brown

Step Five

Remove from the oven.  Place an egg on top of the potatoes. 

Step Six

Step Seven 

Place back in the oven and bake until the egg is set.
