I love potatoes! Almost in any shape or form, baked, cooked, well you get the idea. At one time we even grew them in our garden, but we had a problem with bugs. We call them potato bugs, not sure what the correct name for these little nasty things are, but these bugs love to eat the potato plants and if you didn’t remove them from the plant they would eat the whole plant leaving you with nothing. Well enough about bugs that eat potato plants and back to the potato.
Simple fried potatoes post is not so much a recipe; it is maybe more of a method of making these yummy potatoes. It all started a few months ago when I came home from work super hungry and not a soul in the house, it was just me eating dinner. I had a craving for some fried potatoes, but didn’t want to take the time to fry raw potatoes; I knew that it would take way too long. So I decided to microwave a potato until it was tender and ready to eat, then I cut the potato in chunks and fried it in olive oil. Once they were done I seasoned the fried potato with some coarse sea salt and gobbled it up, the potato was that yummy.
I love the flavor the olive oil gave the potatoes, plus the fact that the olive oil is more on the healthy side than your plain old vegetable oil. Since that night I first tried these potatoes I don’t think I have made fried potatoes any other way. I don’t make them just for myself, but for my family who also love them. Simple Fried Potatoes
Potatoes (as many as needed for a meal)
Sea salt to taste
Take your potato or potatoes (depending on how many people you are feeding) and scrub them clean. Poke the potato with a fork and place in a microwave, bake until done (this will depend on the size and amount of potatoes that are being used). Once the potatoes are done cut them in chunks, I like to leave mine a little larger, but they can be cut into any size desired. Coat a fry pan with olive oil making sure that it is well coated. Turn heat on medium heat and add potatoes, you may need to add more olive oil as the potatoes fry. Fry potatoes until golden brown and the skins of the potatoes are crisp. Season with sea salt or your favorite seasoning and serve immediately.
