Potato and Green Pepper Skillet

Potatoes, there are so many ways to fix them and since we eat our fair share of them I am always looking and thinking of new ways to prepare them. I also love the flavor of celery salt, which I have just started using.

So when I wanted to serve simple potatoes on Sunday evening I decided to add a little celery salt and paprika to my potatoes to see what I would come up with. Since our garden has produced a fair amount of green peppers this year, I decided to add some of this to my potato skillet. I also threw in some onion and garlic for a little more flavor.

To be honest I wasn’t sure if I would come up with anything that would be edible, but the flavors of this potato skillet was quite delicious. My guys both took seconds of this dish and I would say that says it all. Great side dish that will go with just about any meal you can come up with.

 

Potato and Green Pepper Skillet
Ingredients:
4 cups potatoes, cut into small cubes
1 cup of green pepper, chopped
1/2 cup of onion, chopped
2 cloves garlic, minced
1/2 teaspoon paprika
1 teaspoon celery salt
Salt and pepper to taste
1 tablespoon olive oil plus 2 more tablespoons
Directions:
1.In a nonstick skillet heat 1 tablespoon over medium heat. Add the onion and garlic to the heated skillet and cook until the onion is tender about 3 to 5 minutes. After they are tender remove from the skillet onto a plate and set aside.
2. Add 2 more tablespoons of olive oil to the skillet and heat. To this add the potatoes and green peppers and continue cooking over medium heat.  Stirring frequently so that the potatoes and green peppers do not burn.
3. Mix the paprika and celery salt together and sprinkle over the potato mixture. Season with salt and pepper to taste.
4. Cook potatoes until they are tender a slightly crispy, about 25 to 30 minutes. Add the onions and garlic back into the potatoes mixture 5 minutes before the completed cooking time.
5. Serve.

    I would absolutely love this. My favorite way to eat potatoes is when they’re crispy.

    Potatoes and almost anything go so well together, and green peppers are wonderful. Lovely dish. Bring on a poached egg!
