Are you done baking your Christmas cookies? I think I have finally finished making mine. From year to year I find myself making the same cookies over and over again. It is not a bad thing, I usually ask all the family members what kind of cookies I should make and they usually list the ones that I made the previous year.
This year when I asked the question, one of the kids actually asked me to make a cookie that I normally don’t make. They asked for these peanut butter blossoms. In years past I made a few different kinds of peanut butter cookies and I found that family was not too fond of them… all except for me any kind of peanut butter cookie is my favorite.
So we will see if this peanut butter cookie will come to be a family favorite or not.
Peanut Butter Blossoms (Source: hersheys.com)
Ingredients:
1/2 cup shortening
3/4 cup creamy peanut butter
1/3 cup granulated sugar
1/3 cup light brown sugar
1 egg
2 tablespoons milk
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Additional granulated sugar
Hershey’s Kisses (It doesn’t have to be the chocolate ones, use your favorite)
Directions:
1. Heat oven to 375 degree F.
2. Beat shortening and peanut butter in a large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk, and vanilla; beat well. Stir together flour, baking soda, and salt; gradually beat into peanut butter mixture.
3. Shape dough into 1-inch balls. Roll in granulated sugar; place on greased cookie sheet.
4. Bake 8 to 10 minutes or until lightly browned, immediately press a chocolate into center of each cookie; cookie will crack around the edges. Remove from cookie sheet to wire rack. Cool completely.
Can’t go wrong with this classic! Love your choice of filling.
