Parmesan Crusted Tilapia Fillets

We didn’t eat a lot of fish growing up. I don’t really remember my mom buying fish in the store except for fish sticks or once in a while canned salmon to make a salmon loaf. But once in a while, a friend of the family would drop off fish after a day of fishing.  The fish that we received were usually sunfish or sunnies as we called them. My mom would pan-fry a ton of these sunfish for a meal and we would eat everyone up; so delicious.

I still love to eat fish. We started eating tilapia maybe a few years ago. It has been only the last few years that I have heard of tilapia. I believe my in-laws are the ones that started us eating this fish.  Although I loved the fish that my mom pan-fried I like to look for new recipes.

Last week we had some tilapia fillets in the freezer so I decided to look for a new recipe to try. I found a recipe on Allrecipes that looked delicious. It was simple, only had a few ingredients, and it was quick to make. The fish turned out to be full of flavor and very tasty. I am sure I will be making this recipe over and over again.

Parmesan Crusted Tilapia Fillets (As found on allrecipes.com)
Ingredients:
3/4 cups grated Parmesan cheese
2 teaspoons paprika
1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
Salt and ground black pepper to taste
4 tilapia fillets
Olive oil
Directions:
1. preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil
2. Mix Parmesan cheese, paprika, and parsley in a shallow dish; season with salt and pepper.
3. Drizzle tilapia with olive oil and dredge in the Parmesan cheese mixture. Place fillets onto the prepared baking sheet.
4. Baked in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.

I’m in the opposite situation. I grew up on the East Coast eating lots of fresh fish. I now live in the Midwest and so miss fresh fish. We don’t eat fish nearly as much as I’d like because what’s available just isn’t what I’m used to. Can’t wait to try this recipe and see what I think!

We ate fish quite often in my childhood, and cook it every now & then today. Our boys are a bit picky when it comes to fish, but your recipe with Parmesan and paprika will give a bit more taste!

I’ve started to eat a lot of fish when I was living in Sydney. Maybe because it’s not that fresh in Warsaw, or I used to think so. I love it, it’s light and you can mix it with everything. Lovely post.

I love how quickly a meal of fish can be made, and I really like that this one is made in the oven. Sounds like a light and lovely meal!

I love the Parmesan in the crust! What flavor that must add – super idea. Great way to cook fish, too. Very healthy – good post. Thank you.
