Every year we plant green beans in the garden and every year so many of them go to waste because we get tired of eating plain old cooked beans. But not this year I have decided to try some new recipes so that those green beans end up on the dinner table for us to enjoy.
I found a simple green bean recipe that has a little more flavor but doesn’t take that much more time to make and the nice thing about it, is it’s healthy. We all enjoyed it so much that I thought I would share it just in case you have some green beans that are sitting in your garden waiting to be picked and you weren’t quite sure what to do with them.
Green Bean Sauté (Adapted from sparkpeople.com)
1 pound of fresh green beans
1 tablespoon olive oil
1 large onion
2 cloves garlic, minced
Salt and pepper to taste
Directions:
1. Cook green beans in boiling water for 10-12 minutes until barely fork tender.
2. Heat oil in a large skillet sauté onion and garlic until golden brown.
3. Stir in green beans salt and pepper. Heat through. Serve right away and enjoy!

Nice dish. I haven’t planted green beans for the last few years for the same reason – too many all at once and I run out of idea for how to use them. Time to plant them again next year, I guess, and I’ll definitely keep this in mind. Thanks.
