Carrot Apple Cookies made with shredded carrots and apples are a delicious way to get your fruit and vegetables. They are slightly healthier than your everyday cookie.
These cookies are delicious. They are slightly chewy and not overly sweet. Make them for your family and they will never know that they are getting their fruits and vegetables in their dessert.
Oatmeal cookies are one of my favorite cookies to make and eat. I love adding different ingredients to go with the oatmeal. The carrot and the apple help to keep the cookies moist and the old fashion oats help to give the cookies a lightly chewy texture.
Helpful Tips
- Make sure to have your ingredients at room temperature.
- Blend the ingredients thoroughly. When mixing the sugar and butter make sure they are creamy when you finish mixing the ingredients. The same thing the dry ingredients make sure they are blended thoroughly before adding the nuts, carrots, and apples.
- Preheat the oven before placing the cookies in the oven. My rule is to turn the oven on when I start the recipe. This way I know that the oven will be heated properly.
- I like using the old fashion oats for this recipe. You can use quick oats if that is what you have, but the texture of the cookies will be changed slightly.
- These cookies freeze well. Cool them completely before placing them in an airtight container to freeze. These cookies can be frozen for up to three months.

- Butter – I use salted butter for cookies. I think it has more flavor than the no-salt butter. The butter gives richness and tenderness to the cookies
- Granulated sugar – Binds with water, locks in the moister, and keeps the cookies from drying out.
- Brown Sugar – Helps make the cookie denser and moist.
- Vanilla – Gives extra flavor to the cookies.
- Flour – I use all-purpose flour. The flour gives structure to your cookies. If your cookies are flat when they are done baking, adding a little more flour to the dough will help.
- Old Fashion Oats – They give texture to the cookies.
- Baking Soda – This helps the cookies rise.
- Salt – Enhances the flavors of the other ingredients.

Steps for making carrot apple cookies
Preheat the oven to 350 degrees F. Prepare the baking sheet, and line it with parchment paper or a baking mat.
Steps one, two, and three
Combine the butter, granulated, and brown sugar in a large mixing bowl. Add the eggs and mix in. The vanilla is added and then mixed in.
Steps four, five, and six
Combine the flour, oats, baking soda, salt, and cinnamon in a small bowl. Add these dry ingredients to the cookie dough and mix well.
Steps seven and eight
Add the shredded carrots, apple, and chopped nuts to the batter and fold in.
Steps nine and ten
Drop by rounded teaspoons onto the prepared baking sheet. Bake cookies until they are browned.

Carrot Apple Cookies
Ingredients
- 1 cup butter
- 1/2 cup granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 1/4 cups flour
- 2 cups old fashion oats
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoon cinnamon
- 3/4 cup shredded apples
- 3/4 cup shredded carrots
- 3/4 cup nuts
Instructions
- Preheat oven to 350 degrees F. Prepare a baking sheet by lining it with parchment paper or a baking mat
- In a large bowl combine the butter and the sugars with an electric mixer, mix until well blended. Add the eggs and beat in.
- Add the vanilla and mix in.
- Combine the flour, oats, baking soda, salt, and cinnamon. Add to the wet ingredients and mix until ingredients are combined.
- Add the shredded apple, carrots, and nuts and stir with a wooden spoon or by hand until it is well combined
- Drop by teaspoons on prepared baking sheets about 2-inches apart.
- Bake in preheated oven for 12 to 14 minutes or until slightly browned around the edges.
- Remove from oven and cool on baking sheet for 1 or 2 minutes and move to cooling rack and cool completely.
Notes
- Make sure to have your ingredients at room temperature.
- Make sure to mix all ingredients thoroughly together.ย
- Use a mini food processor for shredding the carrots and apples. If you don’t have a mini food processor a box grater will work also.
- Turn the oven on when you start making the recipe. That way the oven will be preheated when the cookies are ready to go in the oven.ย
