Avocado vinaigrette, a creamy salad dressing with a bit of a tang.
Oh my gosh it has been a crazy week. I only worked for 3 days this week… vacation time after that. But work was crazy those 3 days I was there and vacation time, well not sure if it was truly vacation time, like in relaxing. I spent most of the time of my first vacation day with my daughter and our grandbabies. Where does a 2 1/2 year old get all that energy?!?
Our youngest child graduated from college this afternoon. How does time go so fast?!? To tell the truth I wouldn’t change one thing. I love being with our children and grandchildren, I am so blessed.
With all that is going on these past few days I have a quick and easy recipe today. I am always trying to live a healthier lifestyle, it is not always an easy thing to do when you are a food blogger. I have been adding a lot of salads to my dinners of late, but I don’t make my own salad dressing. This is something I really would like to change.
So I have watched a few videos and looked at a lot of recipes and I have decided to dive in. One of our local grocery stores had a huge sales on avocados this week so I had purchase a few. I have been thinking about wanting to try avocado in a vinaigrette for sometime now.
I wanted to keep it real simple, but wanted some flavor added to it, since I knew the avocado would not contribute as much flavor as I wanted. I love the flavor of onion and garlic with avocado, so I combined the two with my avocado for this avocado vinaigrette. I thought about going with lime for the acid, but I found out I didn’t have a lime in the house, so I used white wine vinegar instead which worked well.
The avocado vinaigrette turned out to be really creamy and a little tangy, perfect for my dinner salads and I hope your salads too.
Ingredients
- 1 avocado
- 1 clove garlic
- 1 tablespoon onion
- 2 tablespoons white wine vinegar
- 6 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a food processor add the onion and garlic, process the two until finely chopped. Add the avocado and process until all ingredients are smooth and cream. Add the vinegar one tablespoon at a time and process after each tablespoon. Add the olive oil also one tablespoon at a time processing after each tablespoon. Once the oil is combine blend in the salt and pepper to taste.
- Serve with your favorite salad greens and vegetables.
