Ingredients

  • 1 to 1 1/2 pounds ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2/3 cup uncooked rice
  • 14.5 ounce diced tomatoes
  • 4 cups cabbage chopped
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1/4 cup tomato paste
  • 6 cups beef broth
  • Salt and pepper to taste

Instructions

  • In a Dutch oven add the ground beef, onion, and garlic over medium heat cook until the hamburger until browned. 
  • Add the diced tomatoes, cabbage, cooked rice, beef broth, bay leaves, parsley, and tomato paste, and mix until well combined. Stir in the beef broth and Worcestershire sauce. Season with salt and pepper to taste.
  • Bring to a boil, once it boils reduce heat to medium-low and continue to cook until the cabbage is soft, about 15 to 30 minutes.

Notes

  1. Use a Dutch oven or a heavy soup pot for this recipe.
  2. Remove any grease from the Dutch oven once the hamburger is browned.
  3. Season the soup with salt and pepper after all of the ingredients are added.
  4. This is a thick and hearty soup, if you prefer a thinner soup add additional beef broth or add tomato sauce to thin it out.
  5. The soup can be stored in the refrigerator for 3 to 4 days.
  6. This soup can be frozen.
