We didn't eat a lot of fish growing up. I don't really remember my mom buying fish in the store except for fish sticks or once in a while canned salmon to make a salmon loaf. But once in a while a friend of the family would drop off fish after a day of fishing. The fish that we received were usually sunfish or sunnies as we called them. My mom would pan fry a ton of these sunfish for a meal and we would eat everyone up; so delicious.
I still love to eat fish. We started eating tilapia maybe a few years ago. It has been only the last few years that I have heard of tilapia. I believe my in-laws are the ones that started us eating this fish. Although I loved the fish that my mom pan fried I like to look for new recipes.
Last week we had some tilapia fillets in the freezer so I decided to look for a new recipe to try. I found a recipe on allrecipes that looked delicious. It was simple, only had a few ingredients, and it was quick to make. The fish turned out to be full of flavor and very tasty. I am sure I will be making this recipe over and over again.
Parmesan Crusted Tilapia Fillets (As found on allrecipes.com)
3/4 cups grated Parmesan cheese
2 teaspoons paprika
1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
Salt and ground black pepper to taste
4 tilapia fillets
1. Preheat oven to 400 degrees F (200 degree C). Line a baking sheet with aluminum foil
2. Mix Parmesan cheese, paprika, and parsley in a shallow dish; season with salt and pepper.
3. Drizzle tilapia with olive oil and dredge in the Parmesan cheese mixture. Place fillets onto the prepared baking sheet.
4. Baked in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.
